Rama Tomatoes & Goats Cheese in a Raspberry Vinegar & Nut Dressing
Ingredients (Serves 4)
- 8 vine ripened tomatoes sliced thickly
- 150 gm goat’s cheese sliced thickly
- 25 gm walnuts, toasted, chopped coarsely
- 60 ml olive oil
- 1 garlic clove, crushed
- 1½ tbsp raspberry vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons fresh thyme, chopped
- 2 teaspoons sugar
Method
Mix together the olive oil, garlic, vinegar, mustard, thyme and sugar.
Place a slice of tomato on each plate. Top with a slice of cheese. Drizzle dressing over and sprinkle with a few pieces of walnut. Repeat until you have a stack of tomatoes and cheese.
