This is a wonderful, warming soup that brngs out the full flavour of Spanish tomatoes

Serves 6 - Ingredients

Method

Prepare the peppers by grilling until charred, then peel and slice finely.

Place the tomatoes in boiling water for 10 seconds then peel and chop roughly.

Heat the oil in a saucepan and gently fry the onion and garlic until soft but not browned.

Add the celery, pepper, tomatoes, stock, tomato concentrate, sugar and seasoning.

Boil and then simmer for 30 minutes.

Serve with a sprinkling of basil and parmesan shavings.
