February 2005, Indonesian Prawn Salad

Ingredients - Serves 8
- 1 kilo King Prawns, cooked and peeled
- 1 large tin pineapple chunks
- 1 to 2 tablespoons curry paste (or to taste)
- 3 heaped tablespoons mango chutney
- 1 large mango, chopped
- 1 bunch fresh coriander, chopped
- 5 heaped tablespoons mayonnaise
- 1 large iceberg lettuce, chopped
Method
Mix all the ingredients together, apart from the lettuce, in a large bowl and serve on a bed of the crispy lettuce.
