Chicken Cacciatore

A very traditional and easy Mediterranean dish.

Ingredients - serves 4

Method

In the first, large, pan: Finely chop the large onion, carrots and celery and place in the pan with oil and soften gently for 5 minutes Add the chicken and cook until browned then add the chicken stock. When boiling add the white wine and leave to simmer very gently for one and a half hours hours.

In the second pan: Chop up the small onion and place in the pan with oil and oregano. Heat and add the tomatoes and basil. Allow to simmer for 2 hours. Put the contents of the smaller pan in the large pan. Cut the peppers into pieces and add. Season with salt and black pepper to taste.

Serve in a bowl: 2 thighs and 1 drumstick each with crusty bread and butter.
